Tutorial: Family Hotpot Chicken pie

Keep your family/guest asking for more, with this delicious hotpot Chicken pie. The leftover dough was used to make buttery cookies.

Ingredients

  • Plain flour-750gms
  • Butter- salted 125gms and 250gms unsalted
  • Diced chicken breast-800gms
  • Casserole mix  – 2 and a half sachets x 40 gms
  • Water- 0.25 litre to mix dough, enough to cover the fried diced chicken (to mix casserole-mix)
  • Vegetable or Sunflower oil for frying

Equipment

  • Oven- 150degree Celcius middle layer
  • Deep fryer or frying pan
  • Baking pan
  • Rolling pin
  • Pastry brush
  • Mixer with dough hook
  • Soup bowl, dessert spoon, fork and knife/kitchen scissors

Instructions:

Step 1: Put on the oven. Grease the baking pan with unsalted butter.

Step 2: Fry the diced chicken.

Step 3: Put butter and flour in Electric mixer and mix with the dough hook. Add water and mix to a soft dough.

Step 4: Roll out the dough. Wrap (using a rolling technique) dough over the rolling pin (this helps to carry the dough to cover the base or top of the pan- see picture). Put the dough on the baking pan. Do not stretch the dough, instead, lift the side of the dough and let it drop neatly into the pan.

Step 5: Fill the pan with the fried diced chicken.

Step 6: Put the casserole mix in a bowl and then mix with water.

Step 7: Pour the casserole mixture on the fried diced chicken in the baking pan. Roll out the dough and wrap the dough around the rolling pin. Cover the filling(diced chicken and casserole mix) with dough.

Step 8: with a knife trim off the excess dough. Use the handle of the knife to flute the edge of the pie( Cake Crimper or fork can be used).

Step 9: Use a fork to prick the pastry, this allows steam whilst cooking ( I do prick my pastry in a grid-like fashion. It helps me when I am serving pie-portions too). Beat the egg and apply to the top of pastry using a pastry brush(This is optional).

Step 10: Bake in the oven for 45- 1 hour.

Step 11: Sugar was added to the leftover or remaining pastry dough. The sugared dough was rolled out and then cut using cookie cutters. Bake in a moderate oven.
