Me and My Home Cooking: Soya Beans Vegetable Soup with Eba or Rice

Let’s enjoy soya beans vegetable soup with Rice, Eba, Pounded Yam or Semolina/ Semovita.


Soya beans




Palm oil or sunflower oil

Seasoning cubes- Maggi

Scotch bonnet/chilli pepper


Tomatoes- chopped (optional)







Step 1: Put the soya beans in a bowl and soak overnight in warm water.

Step 2: Wash and put the chicken on an oven rack to dry at 200 degree Celsius for 2 hours.

Step 3: Wash and put the beef in a pot, add some pepper and a pinch of salt. don’t add too much salt because the meat will be added to the Soya Beans soup. *We don’t want the soup to be salty.

Step 4: Rinse the soaked soya beans and grind in a blender. Add a little water. Add the chilli if you are using fresh chilli.

Step 5: Wash and shred the spinach.

Step 6: Put two soupspoon of palm oil in the pot. Add the grounded soya beans to it. do not cover the pot. Reduce the cooker heat to medium and let the soya beans cook until it is lumpy and thick( the water in the soya beans seem to have dried). Use the wooden spatula to stir occasionally to prevent it from burning.

Step 7: Add the cooked beef to the soya beans mixture.

Step 8: Shred the dried chicken.

Step 9: Add the tomatoes and if using grounded chilli or chilli flakes, add it too.

Step 10: Add the seasoning cubes and pinch of salt.

Step 11: Add the shredded spinach.

Step 13: Enjoy with Eba(Cassava flakes made stirred in hot water) or boiled white rice.
