Renshaw® teaches how to craft a show-stopping festive rich cake as a table centrepiece

Christmas is our favourite time of the year and it’s a great excuse to have a little cake craft fun, so why not experiment with a big splash of colour? Renshaw’s extensive range of ready to roll icing is perfect for creating vibrant, festive cakes that will impress friends and family.

If you’re opting for sponge rather than a fruited base for your Christmas cake this year you can do this with or without the addition of marzipan.  If you want that perfect professional finish, an initial layer of marzipan will help create a smooth base, and this makes it extra tasty too!

To marzipan your cake: First knead and then roll out your Renshaw marzipan, use a little sprinkle of icing sugar on your work surface to prevent it sticking. When it’s at the right size and thickness carefully lift it over your pin and apply it to your cake.  Smooth down the top and sides by hand and, for that perfect result, finish with a cake smoother.

To ice the cake: Remove the icing from the pack and knead until it’s warm and pliable.  Lightly sprinkle the work surface with a little icing sugar to prevent sticking.  Press the ball of icing flat and begin to roll out from the centre.  Keep an even pressure while you roll and lift and rotate the icing as you go.  If you have first applied marzipan, lightly brush this layer with cooled boiled water, just enough to make the surface sticky.  Gently lift the icing over the rolling pin and drape over the prepared cake.  Carefully smooth the icing from the top and work down the sides.  Using a cake smoother gently smooth over the top and sides of the cake to achieve a perfect finish.  Trim away excess icing with a sharp knife or pastry cutter.

To decorate:
Make little holly wreathes, baubles or puds using Renshaw coloured ready to roll icing, with Lincoln green for the Holly and colourful Poppy red for the bright berries.  We’ve made baubles using Lilac and embossed them using a textured sheet, but you can easily make them from any colour in the range.
